I just had a question: Seems that you can't edit your post after someone replies to it. Am I wrong or it's a IPB feature?

Cuz you know, sometimes you need to edit your post so people who read the first post don't get the wrong idea.

You can only edit your posts, for a certain number of minutes. Then you lose the ability.

Can the mods make /increase this "certain number of minutes"?

Well, as I said sometimes we need to edit the first post cuz we made mistake and realized it later. cuz some people might start reading the thread from the top and won't get into the next posts that has corrected the first post. I really don't get why we shouldn't be able to edit our own posts.

Because you can also easily abuse that ability. Happened many times in the past, so it was disabled. Re-read your post before hitting the "add reply button" or right after and you shouldn't have that problem.
